Barefoot Contessa + Tunes

Hey friends!

Since starting back at school and hitting the University gym, I’ve been reminded of how big of a pain it is to carry around everything that I need for the day! Lap top, text books, food AND gym stuff, it gets to be a lot. The biggest and most bulky weight is my running shoes, but I came up with a solution.

Vibrams! I bought a pair a couple of weeks ago and the benefits go FAR beyond the fact that they are light as a feather and I can squish them into the bottom of my backpack

They force you to run on th balls of your feet as opposed to your heels.

When you ‘heel strike’ it puts a lot of pressure on your joints, but running on the balls of your feet encourages proper form and I can feel it! I’m able to run much faster with no pain after my workout. I have, however, been experiencing major soreness in my calves, but that is common (from what I’ve read) and comes with running on the balls of your feet and should subside over time. The good thing is that it’s soreness in my muscles and not my joints. I love these things! They offer so much freedom in my workouts. I’ve worn them to Body Combat and because they are much less bulky than my runners, I feel much more agile. I’m doing jump kicks like a ninja! I wear them weight lifting as well and find it much easier to stabilize myself when doing things like lunges. My favorite use for them, however, is SPRINTS I feel like I’m flying! The only con to the Vibrams is how incredibly dorky they  look, but that’s a small price to pay, they are amazing.

I was on a pretty long running hiatus, and still am in regard to outside running, but I’m having a lot of fun playing on the treadmill (never thought I’d be saying that). Depending on my mood I like quick and dirty interval runs or more steady jogs where I can just zone out. I don’t mind running outside without music but the treadmill NEEDS tunes.

I’ve managed to snap a few pictures of some noteworthy meals

Last week, I roasted some green beans and tomatoes with herbs, salt, pepper, garlic, olive oil and parmesan cheese and steamed brussels sprouts in vegetable broth with salt, pepper, garlic and a drizzle of honey. Served along a two-egg omelette with a sprinkle of cheese.

My mom accidentally bought vanilla greek yogurt as opposed to our usual plain. It was SUPER sweet but I wasn’t about to let it go to waste  so one morning I doctored it up with orange zest, granola and cinnamon it was DE-licious.

Today after my favorite 6:10 hot class at The Yoga Passage I made the quickest dinner ever of sweet potato, wilted spinach mixed with a laughing cow wedge topped with an egg.

It is most definitely past my bed time, G’night!

Looks like we made it

Friday daaaaaaannnnnce! This week felt so long. Likely a combination of getting back into my regular routine as well as ensuring enough preparation for this weeks exams. But we made it to the weekend!

It’s a GOOD Friday, too! I had my last midterm this morning, meaning I have a very relaxing weekend homework wise. Some easy reading is all I have on the schedule.

I wanted to squeeze in a little workout before my exam so I went to the University gym for some incline walking with my flashcards and back and bicep’s weights. I’ve switched from regular barbel curls to bicep 21s. They had my big scary muscles screaming.

Before the gym I made a big breakfast of Weetabix with granola sprinkles, cinnamon, banana, strawberry, peanut butter and almond milk

After my exam I headed to work for the day and ate this lunch at my desk

Medi-egg salad with a couple wasa crackers + strawberries, which tasted so good.

It was a pretty busy day at work and by the time I got home, nothing sounded better than a grilled cheese sandwich and a glass of wine. But there was no wine to be found! Oh well, one for two, not so bad.

Fresh sourdough, Dijon mustard, cheese and tomato slices fried in a smidge of butter. For a little extra flavour, once you’ve grilled your sandwich, rub a raw clove of garlic on the outer sides of your bread. I cannot wait for the day that garlic breath is socially acceptable.

Off to do a whole lot of nothing! Hey, weekend.

Same ol’ Saturday and Sunday

Weekend posts seem to be becoming the norm around here. I’ll work on fitting in a few week day posts this week since my weekends are pretty routine.

Like slow, leisurely breakfasts. I enjoyed this classy, straight-from-the-waining-container bowl of yogurt with banana, pinapple and strawberries with chia seeds, peanut butter and granola.

Breakfast was pretty substantial and it had to be in order to keep me going through my Saturday yoga doubles. Late lunches are to be expected on Saturdays

On Friday night, we ordered pizza and I made a big salad made with spinach, romaine, tomatoes, hearts of palm and shredded carrots to go along side. Saturday’s lunch was leftover salad topped with chickpeas, sunflower seeds, hummus and feta cheese.

It was really delicious and really satisfying.

After a little bit of reading and a whole lot of relaxing, I got started on dinner which was, yet again, inspired by Jen at Peanut Butter Runner. What can I say? It seems we have very similar taste buds because everything I see on her blog looks so very appealing.

I used her recipe for Brie and Apricot Chicken and served it along side sautéed kale and wild rice medley.

I slept in this morning and despite the sprinkling of snow that came overnight, I wanted something cold so I made a quickie breakfast of Weetabix, banana slices, dried cranberries, granola sprinkles, cinnamon, almond butter and almond milk.

This breakfast is so filling, almost too filling before kickboxing, but I needed the fuel to beat the crap out of the air in front of me.

The rest of the day draaaagged on. I feel like once I’m done with my homework, I have too much time on my hands, which is not true at all because I haven’t touched my laundry all week, my room is a mess and my feet are in desperate need of a self-pedicure.

Lunch was a fried egg with toast and mango slices

Later in the afternoon my mother brought me a coffee with I doctored up with frothed soymilk, cinnamon, and maple syrup.

Have you tried sweetening your coffee with maple syrup? Highly recommended.

Kick boxing days are my second hungriest days of the week (followed by lower-body-weights days) and my hunger hit me SO hard that I basically ran to the kitchen, made these potatoes, and hovered around my mom while she assembled turkey burgers. Once everything was in the oven, I proceeded to alternate between wolfing down forkfuls of salad and opening the oven door to check if dinner was ready. In my haste, I burnt my finger on a baking pan. Eventually, dinner was served.

I have a couple of hours before I head to bed, just enough time to squeeze in one load of laundry and do something about the state of my toes. G’night!

Edible

I know I said I would be glued to the couch all weekend, but 9:30 Body Pump was calling my name!

My gym is having a customer appreciation week where you can bring a friend, I brought along my mom to experience the fun time that is Body Pump. Little lady’s strong!

Today’s meals were all inspired by The Edible Perspective. Ashley, the brains behind this blog, has a tonne of creative, CLEANSE FRIENDLY meals. Much needed for these final few days. I’m getting pretty tired of food.

First up, breakfast was TWO banana scrambles with almond butter and honey

Yet another way to combine my favorite breakfast food groups: Carbs, nut butter and banana.

I went to The Yoga Passage before my Karma cleaning shift for the hot restorative class, it was the best hour and 20 minutes of my week.

For dinner I made a quinoa egg bake with hummus on top instead of cheese. On that note, I miss cheese!

Cleanse be gone

This morning after a big bowl of apple cinnamon oatmeal I headed to The Yoga Passage for some bending and breathing before work

After a brief yoga hiatus – ok, not even a whole week – it felt great to be back on my mat. Challenging, but still great.

Work was uneventful which was nice after a crazy week last week that I’m so glad is over because now I can laugh about it. Har-dee-har.

Lunch was Indian lentil soup made by my mom with zuchinni and mary’s crackers

 

and for dinner I quickly made a tragic dinner of (gluten-free) toast with eggs and hummus with a side of steamed broccoli.

aaaand I’m officially over this cleanse! Six more days, only six more days.

The rest of my evening is going to be filled with Glee and researching which courses I should be taking when I go back to school in January! I don’t know which one I’m more excited about.

Fri-Daze

Well that week went by quickly, didn’t it? I took a double take at my calendar when it said Friday at me. crazy talk, Mr. Calendar!

First on the menu was yoga, I left a puddle of sweat behind and it wasn’t even a hot class !? It was taught by the incredible Gord at the Yoga Passage. Hovering planks, looonnng pigeons and many a wise word. He’s my fave. Now that my work schedule has changed a bit, I won’t be able to make it to my usual Tuesday evening hot class with him, but I’ll be sure to make it to his Friday Ashtanga at 9:30 from now on! This class left me with a dopey smile for the whole day.

Play Work was fantastic as usual, don’t expect that to change, the worst part of my job is packing peanuts so I’m not complaining. We got in some beautiful new scarves.. or shawls? I don’t know! I’m not a scarf/ shawl person and even I  was ooh-ing and ahh-ing over them. Maybe I brought one home with me, maybe I’ll show you tomorrow, maybe it’ll be a fashion post. maybe.

30 second dinner!

Scrambled eggs with curry powder in a wrap, plus half a Costco-sized container of blueberries.

I’m really craving some time in the kitchen this weekend to make something time consuming, what should I make ?
I just spent an hour on the phone harassing U.P.S. and asking WHY the pair of shoes that I ordered last month while half asleep (seriously, I thought it was a dream until I got my receipt in my email inbox) have not made it to my feet yet! One hilarious hour later, we realized that the shoes were sent via Canada Post. D’oh. I finally tracked them down and they will be one with my feet by tomorrow evening. YES.

Labor-Less

Weekend mornings at my house smell like fried eggs.

During the week, my parents, stick to cereal or toast for breakfast. But on lazy weekday mornings, they like their eggs.

I love eggs, but not for breakfast, savoury food at breakfast makes me want to die. Give me carbs, yogurt, fruit and peanut butter. Still, there’s no denying that fried eggs smell deeeelicious. The smell sparks a craving that I’m sure to satisfy later in the day.

Today I put together a sandwich with sprouted wheat toast, an egg, fried in a dab of coconut oil, a sprinkle of cheese, a smear of pesto, spinach and tomato slices.

The rest of my Labor Day was anything but strenuous.

I assumed my position on the sofa and watched five hundred episodes of Diners, Drive-ins and Dives on the Food Network and created a budget for myself for the next two months. Excel is fun! *cough* nerd *cough*

The clock struck 7:30 p.m. and I was ready to go to bed. I don’t DO days off well !! I racked my brain for something to keep me occupied and push my bed time back a few hours. I planned my work outfits for the week, that took all of five minutes.

Then I lost my mind and single-handedly moved the desk that used to be in my bedroom into my living room, filled out my application form to university (!) and ate a cookie.

Real Dinner

I seem to have been slacking on the dinner front lately.

A girl can only eat so many salad beasts and scraps from the fridge until she eats a real dinner.

Omelette with goats cheese, Portuguese rice and wilted spinach

This needs to happen more often.

After dinner more baking for the bake sale ensued

Mini Doughnut Muffins

  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 c. sugar
  • 1/4 c. butter, melted
  • 1/2 tsp. nutmeg
  • 1/2 c. milk (I used almond)
  • 1 tsp. vanilla extract

Sugary Topping

  • 2 tbsp. butter, melted
  • 1/4 c. sugar
  • 1 tsp. cinnamon
Directions:
For the muffins, combine melted butter, sugar, vanilla and nutmeg. Stir the milk in until combined, then mix in the flour and baking powder. Fill muffin cups half way and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
For the topping, keep melted butter in a small bowl and combine sugar and cinnamon in a separate bowl. Dip the tops of the muffins into the melted butter and then into the sugar mixture. Leave to set.

Mini Mocha Cupcakes
  • 3/4 c. all-purpose flour
  • 1/4 c. unsweetened cocoa powder
  • 1 tbsp. instant coffee granules
  • 1 tsp. baking powder
  • 1/2 c. sugar
  • 1/4 c. butter, melted
  • 1/2 c. milk (I used almond)
  • 1 tsp. vanilla extract
Chocolate Ganache:
  • 1/4 c. coconut oil, melted
  • 1/4 c. unsweetened cocoa powder
  • 2 tbsp. agave nectar
Directions:
For the muffins, combine melted butter, sugar and vanilla. Stir the milk in until combined. In a separate bowl, combine flour, cocoa, baking powder and coffee granules. Add dry ingredients into the wet and stir until just combined. Fill muffin cups half way and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Cool completely before adding ganache.
For the ganache topping, mix melted coconut oil, cocoa powder and agave. Dip the tops of each cupcake into the ganache and allow to cool completely.

Vacationing Strategically

You might recall the last time my parents went out-of-town…

The house was a disaster and my liver may never be the same. We (my brother and I) were young and foolish. Ok, it wasn’t even a year ago, but you get the idea.

This time, they planned their getaway more strategically, during a time where I have a million things on my to-do list, exams, presentations, work, and I was sick! It’s also my brother’s last couple weeks of art school. We’re too busy to get into any trouble.

Even better, while they’re sipping margs in their bathing suits, we got another thick blanket of snow the other night.

Once you stop gagging, (Preeya, I’m talking to you) hear me out! Oats are a grain, like rice, or barley, or quinoa, and you wouldn’t be opposed to having THOSE with an egg on top! Savoury Oats are delicious.

Same thing, More veggies, less of everything else.
