Hazy grey day in Calgary today. The perfect day for those who say they love the smell of rain aka. the smell of drowning Earth worms.

I embraced all neutrals today to go with the skies. That reminds me of this incredibly eloquent post speaking to the simple beauty of neutral colors. It may or may not have inspired me to purge my closet of all hilighter toned pieces.

I went to work for a few hours and spent the rest of the afternoon wandering around in the rain, capping the day off with my favorite hot yoga class  ♥

Same ol’ Saturday and Sunday

Weekend posts seem to be becoming the norm around here. I’ll work on fitting in a few week day posts this week since my weekends are pretty routine.

Like slow, leisurely breakfasts. I enjoyed this classy, straight-from-the-waining-container bowl of yogurt with banana, pinapple and strawberries with chia seeds, peanut butter and granola.

Like slow, leisurely breakfasts. I enjoyed this classy, straight-from-the-waning-container bowl of yogurt with banana, pineapple and strawberries with chia seeds, peanut butter and granola.

Breakfast was pretty substantial and it had to be in order to keep me going through my Saturday yoga doubles. Late lunches are to be expected on Saturdays

On Friday night, we ordered pizza and I made a big salad made with spinach, romaine, tomatoes, hearts of palm and shredded carrots to go along side. Saturday’s lunch was leftover salad topped with chickpeas, sunflower seeds, hummus and feta cheese.

It was really delicious and really satisfying.

After a little bit of reading and a whole lot of relaxing, I got started on dinner which was, yet again, inspired by Jen at Peanut Butter Runner. What can I say? It seems we have very similar taste buds because everything I see on her blog looks so very appealing.

I used her recipe for Brie and Apricot Chicken and served it along side sautéed kale and wild rice medley.

I slept in this morning and despite the sprinkling of snow that came overnight, I wanted something cold so I made a quickie breakfast of Weetabix, banana slices, dried cranberries, granola sprinkles, cinnamon, almond butter and almond milk.

This breakfast is so filling, almost too filling before kickboxing, but I needed the fuel to beat the crap out of the air in front of me.

The rest of the day draaaagged on. I feel like once I’m done with my homework, I have too much time on my hands, which is not true at all because I haven’t touched my laundry all week, my room is a mess and my feet are in desperate need of a self-pedicure.

Lunch was a fried egg with toast and mango slices

Later in the afternoon my mother brought me a coffee with I doctored up with frothed soymilk, cinnamon, and maple syrup.

Have you tried sweetening your coffee with maple syrup? Highly recommended.

Kick boxing days are my second hungriest days of the week (followed by lower-body-weights days) and my hunger hit me SO hard that I basically ran to the kitchen, made these potatoes, and hovered around my mom while she assembled turkey burgers. Once everything was in the oven, I proceeded to alternate between wolfing down forkfuls of salad and opening the oven door to check if dinner was ready. In my haste, I burnt my finger on a baking pan. Eventually, dinner was served.

I have a couple of hours before I head to bed, just enough time to squeeze in one load of laundry and do something about the state of my toes. G’night!

Study Breaks

I love my 8 a.m. English class, I love my 8 a.m. English class.

At least I’ll keep telling myself that. until this semester is over. Last night I was rolling around groaning I hate my liiiiife I hate my life. I hate Robinson Crusoe, I hate Daniel Defoe. Probably not helping my case

I packed a peanut butter, honey and banana sandwich to eat at school with a cup of coffee and headed to class for the day

The upside of early classes is being DONE by noon! I high tailed it home and had some left over spaghetti for lunch

After a bit of reading, I gifted myself a bit of time to make a mess in the kitchen.

Seriously.

What came of the disaster were Raw vegan cookie dough balls ala Love Veggies and Yoga


I don’t know how I manage to make such a mess with such a simple recipe. Make these!

I was also inspired by the crumbs in the bottom of my bag of granola to make something new and delicious. Please note that this granola literally lasts less than a week when I’m in this house. It’s Nature’s Path Ancient Grains and tastes like cookies. It’s not what I’d call health food but it’s one of my favorites!

Peanut Butter Granola Balls

Makes 16 balls

  • 1/2 c. granola
  • 15 dates
  • 2 tbsp peanut butter
  • 2 tbsp shredded, unsweetened coconut
  • 2 tbsp dark chocolate chips
  • 1 tsp. vanilla extract
  • pinch of salt
Blend everything together in the food processor and form into balls
I’m going to relax a bit with my English readings and then it’s off to The Yoga Passage for some hot and svetty.

Take my Breath Away

Is it even possible to have a bad day when you eat a COOKIE for breakfast?

Rolled oats, mashed banana, almond butter, shredded coconut, cocoa powder

mash – spread onto plate – fridge – overnight – dream of cookies

drizzled with coconut butter and a sprinkle of cocoa nibs

I went to spin mid-morning for some murderous hills. Hurt SO good. I was a sweaty, breathless mess by the end of class and hobbled away from my bike a new woman.

reason # 964894840 my mom is amazing, after my hunger induced temper tantrum yesterday, she stocked up on a bunch of fruits and veggies (so that I would stop complaining that there is no food) and made me home-made chicken soup with quinoa

My hideous, paint-chipped nails are staring at me from the keyboard, pleading for some attention. Goodnight!

Happy Wednesday! Time to power through the rest of the week (says the girl curled onto the couch in her pjs with no plans besides catching up on 90210 tonight)

Breakfast appetizer

The main event: Carrot Cake Oatmeal

I’ve been trying, basically for my entire life, to not eat in front of the TV or computer. Most mornings I eat while watching the Food Network but for the last few days I’ve stuck to eating, then watching TV – I wake up super early 100% because I don’t like to start my day in a rush. Let’s hope I can stick to it!

After work I went to yoga, everything felt perfect. Strong but noodley.

When I got home I was starving but nothing sounded good. 5 days left of cleansing! After a bit of sulking and staring at my fridge and pantry and freezer I came up with baked sweet potato chips, pan-seared/ oven finished/ cajun spiced basa fish and steamed broccoli

Chilly Whack

Oh me oh my. I’m slowly re-heating after a chilly day at the clinic. Unfortunately our heat was not working! 100 phone calls later, things should be back in order by MONDAY. Oh, life.

This morning, I fueled the furnace with a hot bowl of apple cinnamon oatmeal with a big scoop of almond butter

oats, chia seeds, almond milk, cinnamon, apple sauce, chopped apple, almond butter, walnuts

Worked and worked and grabbed a cinnamon plum tea on my way home. DEFROST ME.

I didn’t formally exercise today, but all of my muscles were contracted for 6 hours straight, that counts right?

Throughout this cleanse, I’ve been sticking with oats for breakfast because they’re easy and delicious and filling. But I’ve had a hankering for crunchy cereal all of a sudden! Unfortunately, Lucky Charms are not on the program (I checked) so I took matters into my own hands

Detox Cereal

Inspired by Quinoa Granola

1/4 c. millet
1/4 c. quinoa
1 1/2 c. rolled oats
3/4 c. nuts and seeds (I used almonds, sunflower seeds and pepitas)
2 tbsp whole flax seeds
1/2 c. unsweetened apple sauce
1 tsp. cinnamon
1 tsp. vanilla
2 tbsp. honey (or maple syrup)
2 c. puffed brown rice

DIRECTIONS
Preheat the oven to 300.

Rinse millet and quinoa and lay out to dry slightly. In a bowl combine oats, millet, quinoa, nuts and seeds.
Mix applesauce, honey, cinnamon and vanilla. Pour over oat mixture and stir until evenly coated.
Spread mixture onto a baking sheet in a thick layer (this makes clusters!) and bake for 45 minutes, stirring every 15.
Mix granola clusters into brown rice cereal and store in an air-tight container.

Stay warm!

Cupcakes on Demand

Last week, one of my good friends from highschool sent me a tweet saying that the company she is interning at is having a party in two days and they need 3 dozen cupcakes ASAP because their initial cupcake sponsor fell through.

Like I need a reason to make cupcakes.


The Mission:

  • vanilla cake
  • pink frosting

This was my first time ever making Swiss Butter cream, the kind with whipped egg whites and a hundred pounds of butter. I used mashed strawberries to give it the pink colour and a little extra girly-ness

It’s a Trap

Hi friends !

In the true spirit of summer vay-cay, I slept in until 8:30 a.m. today! Luxurious!

I played in the kitchen for most of the morning, baking muffins (followed this recipe exactly)and listening to Amy Winehouse on GrooveShark

   

My brother tried one. He liked it but called ‘a trap’ because there are chocolate chips in them, but you take a bite and see GREEN !? Well they are chocolate zucchini muffins.

Thanks to zucchini’s mild flavour, the only thing that the vegetable offers to this recipe is nutrients, moisture and pretty green flecks.

Eventually I cleaned up, dressed up, and ran walked some errands
